The only thing I cooked today was a grilled cheese for lunch. I skipped breakfast and ate out for dinner. I got to learn how to cook!

1 cup all-purpose flour (don't use old nasty poop from your cupboard)
1/2 tsp. baking powder
1 tsp. salt
1/4 tsp cayenne or fresh ground black pepper
1/2 tsp paprika
1 light beer (any kind, just enough to get a pancake batter-like thickness)
Batter is easy. Don't mix it until you're ready to use it, otherwise it doesn't stay airy.
Clean and pat fish dry.
Roll fish in flour.
Dip fish into batter and immediately place fish into the oil (320-240 degrees is perfect).
Cook until golden brown and when done, place on wire rack to drip.
** Don't overload the fryer, the oil will drop in temp and your fish will be soggy... yuck!

Hey maybe there should be a section for this on the forum upgrade? Recipes and such..there's so many ways to fillet and prepare fish. That looks delicious by the way. I need to make a trip to the Huron or Gbay trips asap, on a meat hunting expedition Don't worry I can only keep 2 with my conservation license.
Great idea. Might I add a how to section: fish cleaning, filleting, boat and gear maintenance.....etc.
