how does everyone like to cook there catch ? i usually buy the premade beer batter but ive been told to just throw it in tin foil with butter and let it cook on the bbq . anyone want to share recipes?

The BBQ method is good. If you want to add even more flavour to that tinfoil pouch, add some herbs and slices of lemon to it. Herbs like thyme & basil. Add bits of minced garlic to it. Some Olive oil.. a splash to rice vinegar. Cook. Enjoy.

 

premade batters are ok, but it's so easy to make your own. I don't drink, so beer isn't my go to.. instead, sparkling water inplace of it makes it like tempura batter which is also amazing. Season it and voila.

it all depends what kind of fish you are making. Some fish don't need anything but salt. I also like fish stew especially if is salt water fish.

What type of fish? Bass, eyes, perch, pike I deep fry in beer batter. Homemade of course. And trout, salmon etc oven or BBQ with butter lemon pepper herbs etc.

Beer batter the perch, crappie, and bass when I do eat it. Pan fry trout and eyes in simple butter and cooking oil. MMMM

I make a very simple beer batter that blows that store bought crap out of the water. 

 

Flour, pinch of salt (pepper too if you like).  Pour in guiness beer and stir until you have the right consistancy.  done.

 

I cooked up some lmb/smb fillets at the cottage last week this way, tasted great!!!

Keep it simple. Don't need adulterate nice fresh fish with batter and such.(You probably wouldn't think of doing that to a nice fresh juicy steak. :razz: ). Slight dusing of flour on the skinless side. Fry for a few mins on each side. Keeping the skin on keeps the moisture in.

true say on the steak,  although i prefer traditional beer batter deep fried fish and chips with tartar sauce.  YUMMMMM

You mention bbq grill, filleted slabs marinated in Zesty Italian for eight hours then grilled directly on the gill grates is mighty good eating.
