Always read the exceptions as well:

Grand River - between the former town of Paris (City of Brant) and Brantford from a line across the Grand River in Paris at 100 m (328 ft.) downstream of the Hwy. 2 bridge downstream to the pedestrian and service bridge that crosses the Grand River on an angle upstream (west) of the Brant Conservation Area in the City of Brantford.
-Fish sanctuary - no fishing from Mar. 1 - Fri. before 4th Sat. in Apr.
Only artificial lures may be used.
Only one barbless hook may be used.
Walleye S - 0 and C - 0.
Smallmouth bass S - 0 and C - 0.
Northern pike S - 0 and C - 0.
Brown trout S - 0 and C - 0.
Rainbow trout S - 0 and C - 0.

and

Grand River - from the pedestrian and service bridge that crosses the Grand River on an angle upstream (west) of the Brant Conservation Area in the City of Brantford to the edge of Lake Erie.
-Brown trout and rainbow trout combined S - 1 and C - 0 from Oct. 1 - Dec. 31


So from reading this, I would need to head down to Brantford to fish to avoid the sanctuary?

I fish Bayfield primarily because it is close, and while many sit in their lawn chairs fishing, I much prefer to stand. I was walking the bank further upstream, but there simply are very few fish there at all. If we don't get a good amount of rain in the next while I don't expect that to change much. Had some good rain this weekend, but I have not been up to see how things have developed in the river. I was hoping to get up today, but I needed to help my wife with some stuff. Maybe tomorrow.

I think some people don't realize how little a canoe would spook fish. I know when I fish off the pier in Bayfield I will often hook up fish shortly after boats go in or out and their motors cause a lot more disturbance than a canoe does. Unless you were whacking your paddle against the water, I am guess the fish didn't even pay attention to the canoe. I know it would not bother me. As stated by a previous poster, the people in waders walking out into the deep water disturb the fish a whole lot more.
