Last year we had a video in one of the links on cleaning Perch. It showed how to remove the dorsal fin but leave in the backbone until you cooked it. Then you just peeled it out without any meat loss at all. I though this was a good idea, especially for the smaller Perch. The guy had it down to a science. Any one know where to find it again?

I tried this this past Friday after a morning spent pulling jumbos out of Cooks Bay and this method makes cleaning them a pleasure. For my first attempt I was able to clean about 15 of them in about 10 minutes! I have been converted. It helpful tips like this that make the dreaded cleaning experience a pleasure.
