Anyone caught and ate crayfish from our waters? I've eaten them in the deep south - they look larger than what we've got here but a lake I fish up north has some dandies. If the fishing is slow perhaps I could nail some bigguns for a shore lunch side dish. Any tips, words of wisdom, recipes?
 
Haven't had them in about 40 years, but yes, they can make quite a nice feast. Once boiled up a batch on an army exercise, best meal of the whole weekend. If you can find a hotspot for the invasive rusty crayfish, get the biggest pot you can find and invite everyone in the area code. I don't have any recipes, we just used to boil them, preferably in salted water, and stroke them on butter.
 
I remember the ones I had down south were tasty and darn that last sentence made my mouth water - I'll def. have a crayfish shore lunch next time I'm out. Thanks for the input
 
the ones here are fine for eating if the waters good. my best results come from boiling in salted water.. enough salt so it is similar to the ocean. sounds like a lot but they come out tasting amazing. melt whatever you like on it after or just some dry cajun seasoning caked on after the boil

just thinking about is making me want to go get some
 
Garlic and butter does the taste buds real good my friend. You could add on cajun like Shmog said afterwards for added flavour. Man how I miss New Orleans *drooools*
