Salmon peir fishing deep

I have not fished for salmon in deep water before and i need some help. I fish quite a bit under the lift bridge in hamilton. Since the big laker ships go through there for the steel industries the water is 20-40 ft i think. My question is how do i get my spoons near the bottom? Should i just fish with skein off the bottom so i get deep easily? Also, when fishing the mouth of harbours and rivers and it is wide, should i be casting along the peir, out into the middle, or just cast everywhere?
