Species Specific Lures?

Well I have a semi-question/statement.

Why is it that some baits are considered by some to be species specific when many species will go after them? Seems to be the most common reason for arguments, what will or will not work by fishermen.

Salmon eggs for example can attract just about anything, and as its cheap (free from the fall season), I've used them for getting fish that wont seem to bite with anything else.

I've thrown, them into all sorts of waters and managed to pull something out and "save the day". At the end of the day all fish will eat eggs, just as worms, minnow intimiations and the like can work.

Take trout nuggets, those brown small marchmellow shaped baits, have caught me plenty of perch.
