Great lakes area*, The guy in the video is Tom Larimer, him and Dave Pinczkowski are sort of the fathers of spey around here.

In my experience the use of two handers in this application just allows for ease of use. Casting all day with a two hander is much easier especially when swinging flies especialy with the development in shorter heads. This fact also allows you adapt to differing water conditions. (As a side note I believe the river they are fishing varies in size from run to run, *noted from their other videos)
