Ok, let change the subject from Salmon/Trout

I just had my first Canadian bass (from Guelph lake) and it tasted muddy, so bad that I could not have all of it. I had marinated it in garlic+olive oil+lemon juice + pepper for ~ 2 hrs and then friend it in melted butter! Is it my cooking or bass always tastes like that? Not impressive at all! and one more reason to Release!! 8)
 
I have not eaten much bass, but if caught from clean lakes, I love it lightly fried with a bit of oil, and lemon once it's off the frying pan. I think the keys are 1) clean lake 2) do not heat it for longer than it needs (only a few minutes on medium heat) and 3) Perhaps use fewer ingredients, as I said I love it with just lemon.

I've never fished Guelph Lake, so I have no idea how clean it is, but perhaps the water might be affecting the taste?
 
yeah salmotrutta's right. I heard Mr. Labignan say that if they are caught in muddy swamps they don't taste good, but if they are caught in rivers they have a pleasent taste. Try steelhead 8)
 
I think it's the fact that you caught it in Guelph...

I'd say about 90% of the fish I ever catch while camping is bass, and they are delicious. Minimum 3/4 hour drive though.
 
never ate bass and never will.

probably when im in algonquin next year ill keep one to try. but damn i gotta bring up my A game and beat my personal best smallmouth bass just over 2lbs

my personal best largemouth bass was 1lbs and 8 ounces and i caught it on a pickeral rig off shore in huntsville.
 
I lost a 7lb+ one at the holland river in june on a rig I made. I was shaking for a week after that experience.
 
Yeah, I caught it near a heavily weedy area! They taste like what they eat, I suppose. I am so used to the taste of fish from salt water so have to go back to that otherwise I give up eating fish alltogether. Have a good recpecie for steelhead though, if I bang into one this year!!

Heard Theres Some Good Pike Fishing.... I think or was it walleye.

But don't overcook it like the bass mate. lol I throw what ever I catch in fishcrisp shake it up, put it on medium heat until both sides are dark gold/brown. Then I squeeze lemon on it 8)

When I was a kid every night I would read a complete bass book. Sometimes pike and muskie. My specialty would be topwater lures. Not bad memories 8)

By the bridge on bradford there was like 50 people with white buckets, so umm good luck.
 
I've always heard that bass taste like their environment. If you catch one in muddy, still waters it will taste like mud. If caught in woody area it will taste like wood.
 
I never heard of that phenomenon before. I tend to eat bass from Trent Severn waterways and Cook's Bay and they seem to be good.

We tend to steam our fish for around 10-15 minutes (depending on the size). Then add hot vegetable oil & soya sauce, along with green onions (chopped), and ginger (sliced).

I've also heard that fish are similar to other animals when they're in stress before they die. They release some sort of chemical in their meat, which gives it a different taste. The best thing to do is to kill it and place it with some ice when you take it home. This will make the fish taste as fresh as possible.

I've taken a bass home without doing this and by the time I arrived home, it definitely had a fishy smell to it along with a fishy taste. What a waste that was.
 
Yeah, although its crul to kill them instantly but at least it does not go to waste!
Interestingly, I saw a guy catching several 4-5 lb carps from the same lake and he was saying that they do not smell at all!
