Klamp, in the plated pic is that bannock?

My girl makes really good fry bread and bannock from scratch. Bannock is an amazing bread, couple really well with most meals

Lately, because both of us love cooking, weve been experimenting with breadmaking. its alot of fun, most have turned out very good but some didnt rise properly and came out flat

It's home-made rye. Breadmaking is a blast. It can be frustrating sometimes but it's well worth the effort. It does require a boatload of patience though. I have a great starter, same one for last four years. It produces some outstanding sours and ryes. Get your starter going and you'll have some killer breads for the holidays.

making home made cheesesteaks is just plain awesome! With that brisket though, geez! I'd pay $30 for that sandwich no problem, looks awesome Klamp!

Hey klamp, maybe I can get some tips on a good sourdough from ya? Thats my all time favorite bread, especially for cheese steak or BBQ chicken.

I havent tried to make one as of yet though, but I'd like to get to it this weekend.

And the pics of my pizzas, thats fun too. That crust took well over a year to perfect. It's very simple(now that Ive perfected it to my liking).

If anyone is interested in trying it let me know, I'll gladly share my recipe

I'd love to get a good pizza crust recipe, whenever I make mine i'm chasing it around the table cause it's so springy it shrinks back while i'm rolling it

This recipe will make two nice big pizza crusts.

In a bowl add 4 cups of flour, two tablespoons of quick rising yeast, 1/3 cup of sugar, half teaspoon of salt, tablespoon of garlic powder, 1 tablespoon of onion powder. Mix thoroughly

Add 2 cups of warm water. Then two tablespoons of olive oil then stir (if you have a mixer use that instead, its more even). you'll need to add a little more flour as you go, and after a few minutes of mixing you'll have a wet dough.

Cover with a moist towel and put in a microwave to sit for 40 minutes (to rise, lol, not to cook) The microwave keeps in the humidity.

sprinkle your surface with flour generously. Twist off one half of the dough. Kneed the dough just a little bit (maybe 2 minutes)

Begin rolling out, sprinkle a lil more flour to prevent any sticking. Fold dough in half and repeat. Do this 3-4 times

Place on a pizza sheet.

Preheat oven to 375

Lightly coat the crust with olive oil, then sprinkle on a decent bit of oregeno.

Add to oven and watch closely, remove after about 6 minutes.

Proceed to dress the pizza however you wish.

turn oven to 400 and bake for 16 or so minutes, but watch it, cause the cooking time can vary.

When its cooked to your likeness, enjoy!
 
If you want epic pizza, I'd also suggest making the sauce from scratch. It takes about 4 hours, but its really easy. Prep time is maybe like 20 minutes.

Also, smokes ham, maple bacon and and sauteed crimini mushrooms are of epic proportions for a topping. Use the best mozza available to you, and maybe some provolone :)
 
where do you get the starter? or how do you make it?

Although you can make a starter in about a week, it takes months to years to develop a good (flavorful) starter. Some starters have been around for more than 100 years!

Google it, lots of articles on the process. All it contains is water and flour (50-50). If your starter doesn't take off, try soaking 1 or 2 raisins in the water for half an hour before adding to flour.

yep, just all purpose flour.

Also, if you enjoy experimenting with food (its not gonna be for everyone) but if half way through cooking, add a small amount of honey to the outer crust

I'd consider myself a cook that enjoys good food, not a chef, lol. Klamps food looks like its right outta the best restaurant in the world. He should start a restaurant, not me, lol

I love the recipe for the bread Klamp. I might try the pizza this weekend Manitou, I'll you know how I do.

I'm sure you'll enjoy it! It may take a few times before your really comfortable with it though. Don't over work the dough. The recipes I posted is pretty rough, cause I experiment alot with food but I rarely ever write anything down, so sometimes I forget things, hahaha

Oh yeah, the pizza pic is a lil old too. Dont use a tinfoil tray or the dough will burn abit before the inner crust is fully cooked.

Use a good baking sheet!
 
Oven is broken at the moment but when it's fixed, I will definitely try that dough recipe. Can't do dairy anymore so I am forced to make my own cheeseless pizzas at home if I feel like pizza, can't wait to try it!

Have you tried potato pizza? I love these for a change, no cheese, just really good olive oil, salt and herbs.

Man o man, tonights meal was bbbbeautiful!

Very simple, but seasoned and cooked to perfection! I love that, when food appears bland until you taste it (maybe im crazy?)

A simple broiled chicken breast bathed in a sauce of ketchup, brown sugar, vinegar and coke. Seasoned with salt and pepper.

Steamed broccoli with a little lemon rind

Rotini with parmesan and mozza, salt pepper and olive oil

a a basic salad with tomatoes, thin apple and a homemade tomatoe/dressing with vinegar, roasted and pureed tomatoe, olive oil and a bit of raspberry simple syrup, strained

Unfortunately I took a pic before finishing the dish, Doh! my bad. I'd retake the pic but all the food is gone! :blink:
